These swig-style frosted sugar cookies are soft, buttery, and topped with creamy frosting—just like your favorite soda shop treat! With a crisp edge and melt-in-your-mouth center, they’re the perfect make-ahead snack. No drive-thru lines needed!
Ingredients
5 ½ cups all-purpose flour
3/4 teaspoon salt
½ teaspoon baking soda
½ baking powder
1 cup butter (softened to room temperature)
1 ¼ cups granulated sugar (plus 1/4 cup for rolling)
3/4 cup powdered sugar
3/4 cup oil (I prefer a avocado oil which has a more nuteral flavor)
2 Tablespoons sour cream
zest of 1 lemon (optional but yummy)
2 large eggs
1 teaspoon vanilla extract
frosting of choice (I like cream cheese frosting)
Instructions
- Preheat the oven to 350°F (175°C) and line two cookie sheets with silicone mats or parchment paper.
- Mix the dry ingredients: In a medium bowl, whisk together the all-purpose flour, salt, baking soda, and baking powder.
- Cream the wet ingredients: In a large mixing bowl, beat together the softened butter, 1 ¼ cups granulated sugar, powdered sugar, and oil on low speed for about 1 minute until fully combined.
- Add the wet ingredients: Mix in the sour cream, eggs, vanilla extract, and lemon zest (if using) to the butter mixture. Beat on low for another minute, scraping the sides of the bowl as needed.
- Combine dry and wet ingredients: Gradually add the dry ingredients to the wet ingredients and mix on low until the dough just comes together. The dough should be soft but not sticky.
- Shape the dough: Scoop the dough into 2-3 tablespoon-sized portions and roll them into balls. Place them on the prepared baking sheets, spacing them about 3 inches apart.
- Flatten the cookies: Spray the bottom of a flat glass with baking spray, dip it into the remaining ¼ cup of granulated sugar, and gently press each cookie to about ½ inch thick.
- Bake: Bake the cookies for 8 minutes until they are set but not browned. They will firm up as they cool.
- Cool the cookies: Let the cookies rest on the baking sheet for 2-3 minutes before transferring them to a wire rack to cool completely.
